Maud has been training at school all summer for the European Pastry Championships: "I want to get the best out of myself."
While her friends are on holiday, Maud van Dijk (20) from Volkel has been in the bakery of Summa Bread & Pastry in Eindhoven to train day in, day out. Under the guidance of expert Cees Bakker and instructor Tommas van Rossum, she's perfecting her skills to shine among Europe's best pastry chefs. From September 9th to 13th, she will represent the Netherlands in Herning, Denmark, at EuroSkills 2025, the European championships for young professionals.
Creativity and craftsmanship
In Denmark, a challenging task awaits her. Maud must build an impressive showpiece out of chocolate and nougatine, make two identical cakes, and present three types of tartlets. There's also a mystery challenge: an extra flavor or an unexpected addition that she only learns about at the last minute. This year's theme is the four elements—water, fire, earth, and air—and Maud must demonstrate her creativity and craftsmanship.
The bar is set high, as the jury assesses not only taste and technique, but also hygiene, presentation, and time management. While her showpiece took eight hours to complete in early August, it now has to be finished within five. Thanks to her perseverance, perfectionism, and passion for the craft, she keeps practicing until everything is perfect. Or, as Maud herself puts it: "I want to be the best I can be. This is my passion. And I'm bringing it with me to Denmark."
Summa party!
Maud isn't the only Summa student traveling to Herning. Noud Meesen (20) from Zaamslag also qualified for EuroSkills. He's competing in the CAD drawing category, where he again won the national title at Skills Heroes this year. After participating in WorldSkills last year, Noud is now taking on the challenge at the European level.
