Niels thrives on 'iron-strong discipline'

Niels de Rouw is the best at the National Pastry Championships in Wageningen.

Pastry is in the blood of Niels de Rouw (20) from Vught. He initially chose a career as a professional footballer. But ultimately ended up in his grandfather's and father's profession. Now he's well on his way to becoming a top professional.

Niels competed at the Dutch Patisserie Championships in Wageningen on behalf of Summa College, where he took first place. Yet, Niels remains down-to-earth about the attention he's paid to his achievements. "It's a reward for years of hard work," he says. "Yes, because of my drive, I see my friends a lot less than I'd like. But hey, that doesn't mean I don't have a girlfriend. And did you know I met her during my baking training? It feels like it was meant to be."

Ironclad discipline and motivation combined with a passion for pastry are what drives him. "I want to become one of the best pastry chefs in the Netherlands."
